Today I am sharing my Green Tomato Chutney recipe, this is a great way to use up those homegrown tomatoes that never ripened but it will also work well with firm red tomatoes.
These little pots of yumminess would make great gifts for your friends and family.
What you will Need
500g Green Tomatoes
2 Small Apples (skinned and cored)
80g Raisins
150g Shallots
250g Brown Sugar
250ml Malt Vinegar
2cm Piece of root ginger (peeled)
3 dried red chillies
Pepper & A Pinch of Salt
How to Make
Wash your tomatoes and pop them in a food blender with the shallots and apples.Blitz in the processor until nicely chopped.
Add the mixture to a large saucepan with the vinegar, sugar, ginger, chillies, raisins, salt & pepper. Bring to the boil and keep stirring until the sugar as dissolved.
Reduce to a simmer and leave uncovered for an hour, stirring every 20 minutes, the mixture will turn to a lovely golden brown colour.
Remove the ginger and chillies.
Wash your Kilner jars and while still wet place them in the microwave for 2 minutes to sanitise. Fill with your chutney and screw on the lid while hot.
This chutney will be delicious with cheese and crackers, this is enough mixture to make 3 0.25l jars, but you can easily double to the quantities if you want to make more.
