Not sure if you have noticed, but the UK is in the middle of a heat wave. For an island of people who usually get on average 3 days of sunshine a year, we are struggling. I am really enjoying the beautiful weather, not so much my poor brown lawn, but we shouldn’t complain when it would usually be raining ha ha!
These frozen banana ice pops are amazing in the hot weather, it’s a great way to use ripe bananas and I would like to think it is slightly healthier than standard shop bought ice-creams.
What you will Need
4 Ripe Bananas
lollypop sticks
100g of Dark chocolate
1 Tablespoon of vegetable oil
Chocolate sprinkles
How to Make
Ripe bananas are great for this recipe as they are lovely and sweet. Peel the bananas and chop about 3/4 of the way down your banana. Thread onto a lollypop stick, lay them on greaseproof paper and place in the freezer for 30 minutes.
In the mean time melt the dark chocolate in a heat proof bowl over a pan of boiling water, stir in the oil and once combined take off the heat. You can use white or milk chocolate but I prefer dark chocolate as it is a healthier option.
Take your bananas out of the freezer and dip the banana into the chocolate, use a spoon to completely cover the frozen banana, You will have to work fast as the chocolate will quickly set on the fruit.
Before the chocolate dries, cover with the sprinkles, place back on the greaseproof paper and repeat the last two steps on the rest of the bananas. Once finished place the bananas back in the freezer for a minimum of an hour.
The banana inside the dark chocolate is so creamy, its hard to tell it’s not ice-cream. These are my new favourite treats for a hot day. They would keep for about a week in the freezer, if they last that long!
